The approach of the Irish Waterford distillery to whisky production has been based on wine production since it was founded by Mark Reynier. The distillery team relies not only on barley sourced from regional farmers but also on scientific methods, such as locking the distillate on an olfactometer. Waterford's main focus is on capturing the terroir and biodynamics, which encompasses the natural factors of land, cultivation, barley type, climate and season. The barley for Lacken Peated comes from farmer Francis Kehoe's Lacken Farm. With this smoky bottling, the distillery is returning to the origins of Irish whiskey production. In order to lose as little of the 'terroir' as possible, Waterford whiskey is only distilled twice, unlike other Irish whiskeys. Maturation takes place in four different types of casks and Waterford is the first distillery to use Irish peat from Ballyteague in County Kildare since the 1850s.

The Distillery: Waterford
The Waterford Distillery was created in 2015 by converting a former Guinness Brewery in Waterford, in the very south of Ireland. The distillery's founder Mark Reynier was formerly the mastermind behind the rebuilding of Islay Distillery Bruichladdich. The former Wine merchant approaches Whisky (spelled without an 'e', even if they come frome Ireland) production in a similar way to Wine production: He wants to capture the terroir, i.e. the origin-specific character of the grain, with his Whiskies.

Aroma: Intensiver, frischer Torf mit maritimen Noten, sowie Gerstenzucker, weiche Äpfel und Birnenschalen.
Geschmack: Vollmundig und ölig mit Lagerfeuer und Teeröl, gefolgt von Lapsang Souchong-Tee und saftigem weißem Pfirsich und Apfelmus.
Abgang: Komplexe Tabaknoten von Zigarren, grünem Tee und Teer.

Es ist immer schwer, als großer Fan einen Waterford Whisky objektiv zu bewerten.
Zum Glück waren wir zum Wandern in Irland und haben uns am späten Abend am Torffeuer eines Pubs bei einem Irish Coffee aufgewärmt.
Genau so riecht der Whisky Lacken, nach frischem Torfrauch am Meer, etwas Pfirsich, Nashi Birnen(Apfel/Birnenkompott), süsse, Vanille (leichten Gersten-Malzextrakt mit Vanille mein Frau: Frische Zuckerwatte mit Vanille).
Er schmeckt wie Torffeuer riecht, Ölig , Jodsalz,Rauchsalz, Pfirsichkompott, schwarzer Tee, aufgeschnittene Äpfel, und wieder Rauch…
wie Zigarren aus der Tabakstube riechen, Torfrauch lang lang lang, Gunpowder (Grün Tee)
Fazit:
Zwei Flaschen sind bestellt.
