Kilchoman Genesis describes the 1,130 day journey from harvesting the barley to bottling. Stage 3 is the third bottling in the limited series and refers to peating in production days 13-14. During the peating process, the barley absorbs the distinct Islay peat character and adds layers of complexity to the whisky. After peating and drying, the malted barley is left to rest for at least two weeks before milling and mashing. After distillation, 70% of the smoky Islay malt is matured in bourbon casks, 25% in STR (shaved-toasted-recharred) casks and 5% in sherry casks.

After more than 125 years, the Kilchoman farm distillery is the first new distillery to be built on the island of Islay. At the distillery, which was founded in 2005 and produces a 100 per cent Islay Single Malt, all production steps are carried out on site, from the cultivation of the barley to the filling of the bottles.
