Säntis Genesis No. 3 was first matured in beer casks, as is customary at Säntis, as well as in unusual Russian oak casks. The malt then received a finish in Phoenix wine casks from the Austrian winery Reumann. Phoenix is a cuvée (i.e. a blend) of Blaufränkisch and international grape varieties and is matured in French oak barrels, which were then used for the finish of the Säntis Malt.

Aroma: Butterkaramell, röstiges Malz, Rosinen und getrocknete Feigen mit intensiven Rotweinnoten. Dunkle Kirschen und Beeren gefolgt von Vanille, getrockneten Äpfeln und Bierschaum.
Geschmack: Weinig-süß mit Toffee und würziger Eiche sowie einem Hauch schwarzen Pfeffer, Trockenfrüchten, Tabal und Leder. Wärmend-weich und vielschichtig nach Karamell, Backpflaumen, Bratapfel und Nüssen.
Abgang: Lang und kräftig.
