Neisson Le Rhum Vieux is a tropically matured rhum agricole from the Caribbean island of Martinique. Similar to its sibling Rhum Blanc, the sugar cane for the Rhum Vieux is grown in the northern Caribbean terroir, where the soils are very challenging and rather poorly developed. The volcanic pumice from Mount Pelée has a sandy clay structure, which makes cultivation difficult. The strong sunlight and low rainfall with a very high daily temperature fluctuation make the conditions even more difficult. The sugar cane is then distilled on column stills and the components of the Rhum Vieux are matured for 3-5 years in American oak barrels before being decanted. The subsequent aeration and brewing process slowly and gently reduces the distillate to 45% vol.
