Romero & Sons use the same fermentation, distillation and ageing methods as founder Alfonso Romero did in the last century. In addition to molasses and sugar cane juice, they are increasingly focussing on sugar cane honey, a rare, boiled-down juice of the sweet grass. The result is authentic, full-bodied bottlings without additives or chill filtration, characterised by impeccable technique and quality. Due to the limited capacity of the Ecuadorian distillery, the Romero & Sons 9 y.o. is produced as a small-batch bottling. The blend combines XO molasses rum that is over 20 years old with rum made from sugar cane juice that is at least 9 years old. It is 100% distilled in pot stills at almost 3,000 metres above sea level, matured in French and American oak barrels and bottled.
