For the rare Plantation Isle of Fiji, local sugar cane is processed into molasses and 100% distilled in Pot Stills. After distillation, the rum is first matured for two to three years in American bourbon barrels. Afterwards, the rum was transferred to France, where it was refined in cognac barrels of the 'Créateurs de spiritueux' Maison Ferrand for about twelve months. The maturation in two different types of barrels and the influence of the different climates left traces of warm notes of exotic fruits and sultanas in the Taste.
