Sipsmith is the equivalent of the English word 'wordsmith': just as a wordsmith experiments and creates with words, the London gin distillery creates all sorts of good sips ('sips'). In 2009, founders Sam Galsworthy and Fairfax Hall set up London's first gin still in almost 200 years. Unfortunately, the still was so small that it was not legal to distil gin on it in London - for this, a still had to hold at least 1,800 litres, while the Sipsmith Still only had a capacity of 300 litres. The founders started a petition to change the law and have since been allowed to legally produce their gin.
