For Umiki, filtered and desalinated seawater is blended with Malt and Grain whiskies from distilleries located ocean-side on the coast of Japan. The Blend is a tribute to the evergreen Matsu pine, known for its resistance to coastal salt spray and wind. It is also planted for protection against tsunamis. In addition, the bottling is dedicated to the sea, as it is considered the source of life in Japanese culture. This is how the name UMI (Japanese for ocean) and KI (Japanese for tree) came about. The Umiki is finished in barrels made of pine wood. The process of desalinating the seawater used is an innovation of the distillery and Yoshino Spirits. This way, the blended whisky is produced with renewable energies.
