For the maturation of the Matusalem Gran Reserva, bourbon barrels made of American white oak are used, in which the molasses rum is stored for at least 23 years in the solera system. The solera system is originally a method for maturing sherry and takes its name from the Spanish 'solera' which means 'lying on the ground'. The oak barrels with a capacity of 520 litres are stacked on top of each other and about a third of the fully matured distillate is bottled from the bottom row. The barrels, which are then partly emptied, are then filled with younger rum from the next row up until the top row is empty and filled with new distillate. The resulting mixture of old and young rums is called blending.
