A total of 3,600 backers revived the distilling tradition of GlenWyvis Distillery in the town of Dingwall near Inverness. The whisky distillery is community-owned through the record-breaking crowdfunding project and relies on renewable energy for its production. It is completely independent of the electricity grid, uses local barley and a long fermentation in traditional copper stills. The mash ferments for around 96 hours before being distilled in a 2,500-litre wash still and a 1,700-litre spirit still. Batch 2, which is now available, was matured in first-fill casks that previously held Tennessee whiskey, Oloroso hogsheads and refilled Scotch whisky hogsheads.

Aroma: ja, spirit-forward, aber nicht soo offensichtlich - etwas Birne, fast ein paar Himbeeren, etwas Getreidiges (Haferflocken?), fast Grasiges (Krautiges); etwas (erstaunlich: im positiven Sinne!) Obstlerisches; eine wunderschöne Süße liegt darunter: saftige Äpfel, Blüten, helle Weintrauben; vielleicht ein paar Waldbeeren (Blaubeeren, süße Johannisbeeren, Brombeeren, Kirschen); auch Hefe dabei; wird komplexer und weniger "youthful" mit der Zeit
Geschmack: anders; kräftig - ja, ein bisschen Jugend, aber naherzu herzhafte Töne; schiebt kräftig, Holz, Getreide, Gras, Birne, Apfel, Kirsch, Himbeer, dunkle Fruchtansätze, deutliche Zitrusnoten
Abgang: odd! trocken, erneut nahezu herzhaft; Würze, Birnenanklänge über Mokka; vielleicht wirklich eine Biernote, die manche ansprechen; gar nicht mal kurz, aber auch nicht lang
Kommentar: echt gut, komplex, wirklich anders, vielversprechend; noch nicht ganz "my cup of tea", aber mit mehr Reife wird der wahrscheinlich sehr, sehr gut!
