A total of 3,600 backers revived the distilling tradition of GlenWyvis Distillery in the town of Dingwall near Inverness. The whisky distillery is community-owned through the record-breaking crowdfunding project and relies on renewable energy for its production. It is completely independent of the electricity grid, uses local barley and a long fermentation in traditional copper stills. Approximately 96 hours ferment the mash before it is distilled in a 2,500-litre wash still and a 1,700-litre spirit still. For the 01/19 batch, the distillery got creative and combined the winter and summer harvests of the Concerto and Laureate barley varieties. For 120 hours, the mash was fermented before being distilled into a new GlenWyvis Single Malt. Matured in three different and former wine casks, the whisky also has very individual notes. Ex-red wine casks add black fruits and spices to the overall result, ex-Moscato casks provide floral accents and fruity citrus notes, and Marsala casks give the whisky creation a balanced sweetness.
