The J. Bally Millesime Rhum comes from one of the oldest distilleries in Martinique. The local distillery J. Bally was closed in 1989, but the distillery Saint James continues to distil and mature. J. Bally's process is one of the first in which the sugar cane is harvested from its own plantation, the sugar cane juice is distilled on column stills in the Creole style and then matured in oak barrels. The J. Bally Millésime Rhum Vieux Agricole spends at least 10 years in oak barrels and is bottled neither coloured nor sweetened with an alcohol content of 43%.

The Saint James Distillery, located in the middle of sugar cane plantations in the small town of Sainte-Marie on Martinique, has been producing Rum since 1765. This makes it one of the oldest, still active Rum distilleries on the island.
