This rum was matured for at least eight years in small oak barrels before being re-aged for 11 months in port wine barrels. The Habitation Depaz looks back on 400 years of experience in rum production. The sugar cane is grown and processed exclusively on their own fields on the fertile soil at the foot of the Vukan Pelée. The freshly pressed sugar cane juice is distilled on traditional coffey stills, also called creole column stills. In order to obtain the "controlled designation of origin" (Appellation d'Origine Controlee), the rum must meet very high quality standards.

The Distillery: Depaz
The Depaz distillery is located near the town of Saint Pierre in Martinique, which was once the largest Rum port in the world. Victor Depaz founded his Rum distillery in 1917, just 15 years after the eruption of the volcano Montagne Pelée, which at the time destroyed the entire town at its feet.
