The J. Bally Millesime Rhum comes from one of the oldest distilleries in Martinique. The local distillery J. Bally was closed in 1989, but the distillery Saint James continues to distil and mature. J. Bally's process is one of the first in which the sugar cane is harvested from its own plantation, the sugar cane juice is distilled on column stills in the Creole style and then matured in oak barrels. The J.Bally Pyramide Rhum matures in oak barrels before it is bottled neither sugared nor coloured at 45% vol. The bottle shape is reminiscent of a pyramid and was introduced by Jaques Bally in 1930.
