The J.Bally Millesime Rhum comes from one of the oldest distilleries in Martinique. The J. Bally distillery there closed in 1989, distilled and matured, but continues to be distilled at the Saint James distillery. J. Bally's process is one of the first to harvest sugar cane from its own plantation, distil the sugar cane juice on Creole-style column stills and then mature it in oak barrels. This version of the J.Bally Pyramide Rhum spends 12 years in oak barrels before it is bottled neither sugared nor coloured at 45% vol. The bottle shape is reminiscent of a pyramid and was introduced by Jaques Bally in 1930.
