The Holyrood Noir Premier Cru Yeast Single Malt Whisky from the Holyrood Distillery impressively embodies the innovative approach of the young distillery from Edinburgh. Here too, the focus is on the targeted play with unusual yeast strains, which gives the Noir series its unmistakable character.
The Noir trilogy tells the story of an unusual combination: French wine yeasts meet Scottish barley malt and then enter into a classic liaison with fine wine barrels from the best vineyards. The Premier Cru Yeast Single Malt uses a particularly high-quality wine yeast, as used in the production of Premier Cru wines. This yeast produces an elegant, finely structured flavour that lays the foundation for the later complexity during fermentation. The whisky is then matured in carefully selected wine barrels, which further intensify its fruity and sweet notes and lend it additional finesse. The combination of fine wine yeast and high-quality cask maturation ensures a harmonious and multi-layered flavour that clearly stands out from classic Single Malts. The flavour of Holyrood Noir Premier Cru Yeast Single Malt Whisky is reminiscent of a fine French patisserie. In the foreground are intense notes of tarte tatin, accompanied by toffee, butterscotch and juicy pear. These sweet and fruity impressions are supported by a soft, round texture that gives the whisky a particularly accessible yet elegant style.
