The Holyrood Noir Burgundy Yeast Single Malt Whisky from the Holyrood Distillery continues the distillery's innovative line and impressively demonstrates the influence that carefully selected yeast strains can have on the flavour profile of a whisky. As part of the experimental Noir series, this bottling is also characterised by the combination of Scottish malt and French wine tradition. The Noir trilogy is dedicated to the idea of combining classic whisky production with elements from the world of wine. The Burgundy Yeast Single Malt uses a wine yeast from the Burgundy region, which is normally used in the production of Burgundy wines. This special yeast brings a particular balance of fruity and slightly savoury notes to the fermentation process, creating a complex and unusual flavour profile right from the raw spirit. As with the other bottlings in the series, fermentation is followed by maturation in selected wine casks from first-class vineyards. This choice of cask emphasises the vinous and fruity characteristics and gives the whisky additional depth and elegance. The combination of Burgundy yeast and wine cask maturation results in a harmonious interplay of sweetness and spice that characterises this bottling. In terms of flavour, the Holyrood Noir Burgundy Yeast Single Malt Whisky moves precisely in this area of tension. The focus is on a successful combination of sweet and savoury notes: Memories of digestive biscuits with raspberry jam meet fruity, slightly tart accents reminiscent of pomegranate. The profile is complemented by hints of biscuit baskets filled with brandy, giving the whisky a fine, almost patisserie-like complexity. Overall, this bottling presents itself as a balanced, modern Single Malt with a creative twist. The Noir series is emblematic of Holyrood Distillery's approach to pushing traditional boundaries and creating new flavour experiences - with yeast as a deliberate design element and wine casks as a style-defining finish.
