The Holyrood Noir Burgundy Yeast Single Malt Whisky from the Holyrood Distillery continues the distillery's innovative line and impressively demonstrates the influence that carefully selected yeast strains can have on the flavour profile of a whisky. As part of the experimental Noir series, this bottling is also characterised by the combination of Scottish malt and French wine tradition. The Noir trilogy is dedicated to the idea of combining classic whisky production with elements from the world of wine. The Burgundy Yeast Single Malt uses a wine yeast from the Burgundy region, which is normally used in the production of Burgundy wines. This special yeast brings a particular balance of fruity and slightly savoury notes to the fermentation process, creating a complex and unusual flavour profile right from the raw spirit. As with the other bottlings in the series, fermentation is followed by maturation in selected wine casks from first-class vineyards. Geschmack: Voller und etwas kräftiger mit süßer Vanille und Toffee, kombiniert mit dunkler Fruchtigkeit wie Kirsche oder schwarze Johannisbeere. Die Weinfässer bringen Struktur, leichte Trockenheit und eine feinherbe, würzige Note.
Abgang: Mittellang bis lang, leicht trocken und würzig. Dunkle Früchte und Eiche bleiben präsent, begleitet von einem eleganten, leicht tanninbetonten Nachklang.
