The Holyrood Noir Bordeaux Yeast Single Malt Whisky from the Holyrood Distillery is an exciting example of modern whisky innovation with a clear signature. The distillery from Edinburgh pursues an experimental approach in which not only casks but also yeast strains are used in a targeted manner to create new flavour profiles. This is precisely where the Noir series comes in. The Noir Trilogy is a series of whiskies that focus intensively on the influence of wine yeasts and wine cask maturation. A French wine yeast, which is commonly used in Bordeaux wine production, plays the leading role in the Bordeaux Yeast Single Malt. This special yeast introduces fruity, dark and slightly acidic notes into the fermentation process, creating an extraordinary aromatic framework even before the cask maturation. The combination of Scottish barley malt and French wine yeast is a deliberate choice and has a significant influence on the character of this whisky. Distillation is followed by maturation in selected wine casks from renowned wine regions, which further enhances the fruity and vinous notes. This "classic romance with wine casks", as the range describes it, gives the whisky depth, complexity and an elegant structure. Taste-wise, the Holyrood Noir Bordeaux Yeast Single Malt Whisky is clearly fruit-driven. Abgang: Mittellang, frisch und leicht trocken. Rote Beeren und feine Eiche klingen nach, begleitet von einer eleganten, leicht weinigen Note.
