The Millstone Medium Peated Sauternes Cask #200164 is a Dutch Single Malt Whisky from the Zuidam Distillery. The whisky was distilled in 2020 from medium peated barley malt, which gives the whisky a noticeable but not dominant smoky flavour. Distillation was carried out traditionally in small copper stills, resulting in a smooth and flavourful distillate. This whisky was bottled in 2025 after 5 years in a single Sauternes cask. Sauternes is a noble sweet white wine from Bordeaux in France, whose casks are rarely used in whisky maturation. However, they release intense flavours and give the whisky a distinct sweetness and complex fruity notes. In this case, the result is a balanced profile that emphasises both the smoky structure of the whisky and the influences of the wine cask. The single cask creation was bottled at cask strength for a German importer without chill filtration and without colouring and is a balanced combination of light smokiness and fruity sweetness.
