Flóki Icelandic Birch Finish is made entirely with ingredients from Iceland. The particularly robust Icelandic grain contains little starch, which is why about 50 per cent more barley must be used than with other barley varieties. This bottling was first matured for three years in American oak barrels and then received its finish in barrels made of Icelandic birch wood.

First thing on the nose: Leather, like a saddle, there's a bit of horse in there (weird note, I know but it's there and not unpleasant). Then some floral notes, daisy I think. Some sage there too.
Adding water brings out more sweeter floral notes and relaxes the leather. With time, more complex herbal notes come out, including spearmint.
Palate: Sweetness that rapidly evolves in to woody* bitterness with spices, predominantly cloves but some others in there too. There's a bit of chilli hotness in there too (not the flavour though). Wood and spices linger on the finish.
With water, the sweetness stays longer and blends very nicely with the spices. The bitterness and hot notes become much more tame.
This whisky benefits a LOT from adding water and taking your time!
