This Dalmore Single Malt is part of Signatory Vintage's Cask Strength Collection, which was created as Symington's Choice by Andrew W. Symington. The whisky comes from one of two sister casks that Symington selected at the Dalmore distillery. Signatory has been one of Scotland's most successful independent bottlers for 35 years. Symington and his team have always sought out rare whisky casks. These are from distilleries that have already closed, sought-after Single Malt Whiskies from distilleries that no longer release casks, or from distilleries that do not release whiskies under their own name at all. This 21-year-old whisky rarity from the Dalmore distillery matured exclusively in a first fill Oloroso sherry hogshead.

Dalmore is a high-quality Highland distillery with a good Whisky and an elegant bottle design. The distillery was long run by the noble Scottish Mackenzie clan. A member of the clan once saved King Alexander III's life while stag hunting by stabbing a deer attacking him at the last second. The king was so grateful that he allowed the Mackenzie clan to bear the royal twelve-tailed stag on their coat of arms. This symbol is still displayed on Dalmore bottles today. It was founded in 1839 and extended very often.
